Healthy Apple Walnut Muffins

15 Minutes prep
Makes 12 Muffins
2 cups all-purpose flour
1 tsp baking soda
¼ tsp ground cinnamon
¼ tsp ground ginger
¼ tsp ground allspice
¼ tsp ground nutmeg
¼ rounded tsp salt
2 large eggs
1 cup plus 2 tlbsp frozen, thawed apple juice concentrate
2/3 cup buttermilk
2 tlbsp oat bran
2 small Granny Smith apples, peeled, cored, and chopped
1/3 up chopped walnuts (about 1 1/3 ounces).

Preheat oven to 375 degrees.
Grease muffin pan (do not use paper, muffins tend to stick to paper).

Mix together flour, baking soda, cinnamon, ginger, allspice, nutmeg, and salt.

Mix together, in a separate bowl, eggs, apple juice, and buttermilk.

Stir flour mixture and oat bran into egg mixture until dry ingredients are just moistened. Do not over mix. Gently stir in chopped apples and nuts.

Spoon batter into prepared pan, filing cups two-thirds full.

Optional: Garnish each muffin with an apple slice.

Bake muffins until lightly golden and tops spring back when pressed, 25 minutes.
Cool muffins on rack.

Baking Tips: Instead of frozen apple juice concentrate, use other bottled fruit juice concentrates. Experiment with interesting flavors such as papaya, pineapple, and mango for a tropical taste. Health food stores generally carry the best variety.

Chewy Sauce Pan Brownies

I have been making these since I was a child. This was was mother’s favorite recipe.

2/3 cup of butter (5 1/3 TBSP)
2 Squares of Semi Sweet Chocolate
1 cup of Sugar
2 large Eggs
½ tsp vanilla
½ tsp of salt
3/4 Cup of Flour

Preheat oven to 375 degrees.
Grease 9X9 pan (I prefer glass) with butter

In a sauce pan melt the butter and the chocolate.  Be careful not to boil or burn the chocolate.  Remove from heat once it is all melted. Add in the sugar, stir with wooden spoon or spatula until combined.  Next add in the eggs.  Again mix with wooden spoon until combined. Now mix in the salt and vanilla. Next add the flour.  Carefully fold the flour in so it does not end up all over the counter.  Once most of it is mixed in you can stir faster.  Pour the mixture into your pan and bake for 20 to 25 minutes.  Check after 20 minutes with a toothpick.  Do not over cook them they will get dry.

Glazed Pork Tenderloin

Glazed Pork Tenderloin

Prep: 10 Minutes

Cook: 45 Minutes

Serves 4

1 Pork Tenderloin
1 Tsp Beef Bullion Paste ( Better then Bullion)
2 Tbsp Brown Sugar
1 Tbsp White Vinegar
1to 2 Tsp Dry Mustard
1 Tbsp Pure Maple Syurp

Combine ingredients (except pork) in a small bowl and mix well with fork or spoon.  Place Tenderloin into cooking dish lined with foil.  Salt and Pepper meat if you like and apply mixture to top of meat.   Cook at 350 degrees for about 45 minutes. Texas Chicken/Turkey Burgers

Texas Chicken Burgers

Prep: 20 Minutes

Cook: 10 Minutes

Makes 4 Burgers

1 Pound ground chicken or Turkey
2 green onions
1 small zucchini (5 oz) shredded
1 medium carrot, shredded
1 table chili powder
½ teaspoon of ground cumin
¼ teaspoon ground red pepper (add more or less for your taste)
dash of salt
Combine ingredients in a medium bowl and mix well. Shape into 4 patties and grill until done about 10 minutes. You might want to use a non-stick spray for your grill because the burgers are very moist they tend to stick.The burgers are best topped with Lettuce, Tomatoes, and Mustard. Use weight watchers buns (found in the grocery store) if want tohave less calories and fat. Mayonnaise will also add fat and calories. Serve with baked beans or potato wedges.
